Chardonnay
This Chardonnay comes from well-exposed hillsides with clay-limestone soils, where the vines benefit from generous sunshine and temperate nights. This thermal contrast promotes the concentration of aromas and preserves the grapes' natural acidity. The result is a luminous, round, and expressive cuvée, just like the South.
Grapes harvested at night, followed by direct pressing with selection of free-run juice. Fermentation at a temperature of 54-64°F depending on the selected yeasts.
Once fermentation is complete, the wine is racked and then aged on fine lees for two months, with stirring twice a week to put them back into suspension and bring more roundness.
The entire process takes place in temperature-controlled stainless steel tanks.
Its light yellow color with golden highlights illuminates the glass and invites you to taste it.
The nose is delicate, opening with white peach and fresh pear, with light notes of apricot, enhanced by hints of acacia flowers.
On the palate, the roundness is balanced with a smooth and fruity attack, combining crisp apple and sweet mango. The attack is fresh, then the wine opens up with a beautiful roundness carried by aromas of white fruits, vine peach, and a slight note of acacia flower. The finish, lively and thirst-quenching, reveals a chiseled acidity and a touch of green apple.
