Merlot
This Merlot is grown on clay-loam soils, in the heart of sunny terroirs where the grapes reach their optimum ripeness. The influence of the warm climate, tempered by regular winds, allows the grape variety's aromatic richness to fully express itself. The result is a generous, round, and intensely fruity cuvée, faithful to the convivial spirit of Yvan et Co. The grapes are harvested when fully ripe. Fermentation takes place in vats for around three weeks at a controlled temperature (64–75°F).
After fermentation, the wine is separated from the pomace without reintegrating the press juices.
Malolactic fermentation then takes place on fine lees, before aging in stainless steel vats until bottling.
Its bright ruby red color reflects perfectly controlled maturity.
On the nose, this Merlot reveals delicious aromas of juicy cherry, wild strawberry, and ripe plum, enhanced by delicate notes of cocoa.
On the palate, the texture is supple and velvety, supported by mellow tannins and well-balanced acidity. The finish is smooth and persistent, leaving a pleasant sensation of sweetness.
