Night harvesting to preserve the freshness of the grapes, followed by direct pressing in a pneumatic press.
The must is then placed in cold storage for 7 to 10 days at 6°C. Alcoholic fermentation takes place at 17°C, with the filtered lees being reintroduced.
After alcoholic fermentation is complete, the wine is racked to clarify it. Vinification and aging take place in temperature-controlled stainless steel vats.
Its crystal-clear color with silvery highlights reflects its liveliness and invites enjoyment.
The nose bursts with notes of citrus, lemon, green gooseberry, and grapefruit, mingling with a floral touch and fresh minerality.
On the palate, the attack is lively and mineral, giving way to a silky texture, revealing bright citrus and white peach flavors carried by a salty finish.
